Creamy Beef Stew

Introduction

This hearty Beef Stew will warm your tummy! This hearty Beef Stew will warm your tummy!
Number of Servings: 8

Ingredients

    1 lb of stewing beef
    1 cup of onions chopped
    3 cloves of garlic
    1 cup of carrots chopped
    1 cup of green beans
    1 cup of mushrooms sliced
    3 cups of spinach (stems removed and roughly chopped)
    1 cup of mushroom soup
    1 sprig of rosemary
    2 sprigs of thyme
    2 bay leafs
    1/2 cup of parsley chopped
    1/4 cup of cornstarch
    salt and black pepper to taste
    1 tbsp red pepper flakes
    2 tbsp of olive oil

Directions

Season cornstarch with salt, pepper and red pepper flakes. Toss beef into seasoned cornstarch and add to a large pot with 2 tbsp of olive oil. Brown the meat then add carrots, celery, onion, and garlic, stir to mix with the meat. Add the rosemary, thyme and bayleaf. Add consomme and let beef mixture simmer for one hour. If liquid evaporates add a cup of water, you want teh meat to cook till it falls apart. Add green beans, mushrooms and the can of mushroom soup, stir. Let simmer another 15 minutes before adding the 3 cups of spinach (spinach will cook down to about 1 cup), stir to blend all ingredients and serve using large soup bowls.
Hint: You can either put a cup of brown rice in the bottom of your bowl (Consolidation Phase), or serve alone with a side salad. Great for a cold winter night!
