IntroductionMeat Loaf with a mushroom sauce Meat Loaf with a mushroom sauce
1 lb of lean ground beef
1/4 cup of dry oatmeal
1 cup of raw onion chopped fine
1/2 cup of green pepper
1 envelope of onion soup mix
5 tbsp of ketchup
salt and pepper to taste
Mushroom sauce preparation:
1 can of evaporated non-fat milk
1 cup of sliced fresh mushrooms
2 cloves of garlic
2 tsp of corn starch
Put your ground beef in a bowl and add egg, oatmeal, ketchup, onion soup mix, chopped green pepper, and chopped onion. Mix together and mold into a loaf pan. Put into an oven of 350F and allow to bake for 45 minutes.
Preparation for Mushroom sauce:
While your meatloaf is cooking prepare the sauce. Sautee onionis and mushrooms and garlic in a sauce pan, allow to carmelize just a little bit and add 1 can of evaporated non fat milk to a sauce pan, stir and bring to a low boil. Add your cornstarch slurry to the milk and stir till slightly thickened.
When meatloaf is done take from oven and allow to rest for 10 minutes. Take from the pan after the 10 minutes and slice into 8 even pieces and plate. Spoon the mushroom sauce over each serving and enjoy with a steamed vegetable medley or salad with lots of greens!
