I am a cheese addict and have really REALLY missed my cheese toasties, this is a fantastic substitute for welsh rarebit and at only 300 calories is an ideal quick and simple lunch. If each slice is cut into quarters would make a great party snack at only 38 calories a piece! Ingredients

2 slices 50 calorie bread (I used Warburtons sandwich thins)
2 tbsp low fat mayo
2 tbsp grated parmesan
30g low fat cheese (cheese I used was Morrisons Eat Smart 30g slices at 52 calories per slice)
1 tsp horseradish.
Directions
very lightly toast bread to "dry" out
mix mayo, parmesan and horseradish together, spread mixture over bread and cover with low fat cheese and (if required) sprinkle of oregano and/or worcester sauce.
grill until mixture is bubbling and golden.
