Crunchy Broccoli with Garlic

The fried panko crumbs made this dish the first broccoli I'd eat. Careful, it's a gateway recipe. Soon you'll be eating broccoli prepared all kinds of ways!

Number of Servings: 4

Ingredients

    1lb broccoli, trimmed and cut into small florets
    1Tbsp minced garlic
    2Tbsp olive oil
    1/2C Panko bread crumbs
    salt & pepper, to taste
    1Tbsp chopped parsley
    2Tbsp Parmesan cheese

Directions

Boil 2.5 quarts of water. Add broccoli florets and cook, covered, for about 5 mintues, just until tender. Drain & rinse w/cold water.

While broccoli is cooking, heat garlic & oil in large skillet over medium-low heat, stirring frequently, about 5 mintues, until garlic is lightly golden. Stir in bread crumbs, salt, & pepper. Increase heat to medium and cook for 3 minutes, until crumbs are a golden brown. You'll want to stir this occassionally. Remove from heat.

Toss broccoli & parsley in crumb mixture. Cook, uncovered, in skillet for another 2 minutes, or untul heated.
