2 tbs butter or alternative 3 leeks, white & light green parts only, chopped 1/2 cup chopped yellow onion 3 med potatoes 2 cups homemade vegetable stock 1/2 cup soy milk creamer 3/4 tsp salt 1/4 tsp ground pepper minced chives for topping
In large soup pot, melt butter. Add vegetables and saute 3 minutes. Add 1 cup stock. Reduce heat and cover 15 minutes. Add more stock if necessary. Puree. Add creamer, salt & pepper. Simmer 5-10 minutes. Sprinkles tops of full bowls with chives.
