Here's a healthier take on an old favorite. Chicken breasts instead of beef make this a better cholesterol choice and adding in vegetables is always a plus health-wise! Ingredients

1 package Knorr (Lipton) Stroganoff Noodles
2 boneless skinless chicken breasts
2 Tbsp olive oil
1 can of veg all drained or 1 bag frozen mixed vegetables
Nature's seasoning (optional)
ground black pepper
Directions
Heat olive oil in pan over medium heat. Add chicken breasts, add seasoning and pepper and cook thoroughly on both sides. Dice chicken into small cubes. Prepare noodles according to package, but add chicken and vegetables during last 4 minutes of boiling. Let stand about 2 or 3 minutes and serve. NOTE: If vegetables are frozen, which is the kind I prefer for this recipe, you might want to microwave in the oven for a few minutes first with a little water and drain before adding.
