Mediterranean Sauce for Fish or Chicken

Introduction

This sauce comes from the Mediterranean Baked Fish Recipe that I love so much. I can no longer get an accurate calorie count from SP because it's crossed with some 5000-calorie chicken stir fry recipe, so I've added it by itself so I can use it with any meat I want. Number of Servings: 4

Ingredients

    2 tsp olive oil
    1 C onions, sliced
    1 can (16 oz) tomatoes, diced
    3/4 C apple juice
    1/4 C lemon juice
    1/4 C orange juice
    1 clove garlic, minced
    1 bay leaf
    1 T fresh grated orange peel
    1 tsp fennel seed, crushed
    1 tsp Mrs. Dash (original called for 1/2 tsp each oregano, thyme, basil, dried and crushed)
    black pepper to taste

Directions

Heat oil i nlarge nonstick skillet. Add onion and saute over moderate heat 5 minutes or until soft.
Add all remaining ingredients, stir well and simmer for 30 minutes.

Arrange fish, chicken or meat of your choice in a shallow baking dish (calories not included in calculation), cover with sauce and cook as appropriate. Can also spoon cooked sauce over pre-cooked meat, e.g., grilled chicken.
