Tomato Soup (organic)

Introduction

Number of Servings: 4

Ingredients

    2-3 Organic Tomatoes, blanched, skinned, and diced
    2 Cans Organic Tomato Sauce
    1 T fresh Organic Basil, chopped
    3 Cloves Organic Garlic, minced
    1/2 C Organic Onion, chopped
    1 T Olive Oil
    1 C Fat free Half & Half
    Salt & Pepper to taste

Directions

In a deep skillet, heat the olive oil and add the onion. Cook until clear but not brown. Add garlic, sautee for a couple minutes, then add diced tomatoes. Pour in tomato sauce and let simmer for about 15 minutes. Add in half & half and basil and let cook for another five minutes. Salt and pepper to taste.

Makes four one-cup servings.
