Best Ever Chicken Parmigiano

Introduction

No breading, frying or mozzerella is used in this version of chicken parm. The fabulosity of the dish is contingent on using organic chicken, organic tomato paste (which is much sweeter and cooks faster than conventional paste) and imported, sharp Provolone, which should be grated by you...trust me, there's a big difference in a good quality imported Provolone (such as Auricchio) and domestic, cheap brands... Ingredients

    2 organic chicken breasts, skinless & boneless
    1 jar (7 oz) Bionaturae organic tomato paste
    1 package (10 oz) fresh whole white mushrooms
    1 large onion
    3 tbsp extra virgin olive oil
    1.5 cups water

    To taste:
    Oregano
    Dried Basil
    Ground Black Pepper


Directions

Butterfly breasts into 6 pieces and lightly sear in 1 tbsp oil...once both sides have been seared, transfer chicken to a baking dish.
Coat the bottom of a large skillet with oil (aprox 6 tbsp) and saute peeled, chopped onion;
Clean and slice mushrooms into 1/4" inch pieces; add to onions...saute uncovered, until caramelized, about 10 mins;
Add entire jar of tomato paste, and spices to taste; stir in 1.5 cups of cold water until smooth; cover, and cook until sauce simmers;
Grate cheese, set aside
Preheat oven to 350
Once sauce has simmered, add to chicken; it's important to cover chicken completely with sauce to keep it from drying out. You'll have aprox 1 to 2 cups of sauce left over...it freezes well.
Sprinkle cheese on top of chicken and bake, covered, for 25 mins
