Introduction

Risotto made with fat free chicken broth. Risotto made with fat free chicken broth.
Number of Servings: 8

Ingredients

    2 cups of Arborio rice
    8 cups of fat free, reduced sodium chicken broth
    2 TBL of extra light olive oil
    1 TBL butter
    1/4 c. Kraft Parmesan Cheese
    2-3 cloves of fresh garlic
    handful of fresh basil leaves, chopped.

    **Serving size is generous.

Directions

Heat chicken broth until hot (either in microwave or in a separate sauce pan. On medium-medium high heat, melt butter and oil in large skillet, and toast rice and fresh garlic in pan approximately 5 minutes. Add chicken broth by the ladlefull, stirring as you go. Continually stir rice and broth mixture until all broth is added and mixture becomes soft and creamy. Approximately 20 minutes. Add parmesan cheese and fresh basil once rice is done cooking - stir in.


Serving Size: Makes approximately 8 1-cup servings.
