Savory Cherry Pork Tenderloin with simple Sage Pan-Gravy

Ingredients

    2 Pork tenderloins
    Nutmeg, ground, 2 tbsp
    Cinnamon, ground, 2 tbsp
    Cumin, Ground, 2 tbsp
    Sage, ground, 2 tbsp
    Butter, salted, 2 tbsp
    Frozen Cherries, 2 cup, without pits
    Chicken Broth, 1 cup (8 fl oz)
    Corn Starch, .125 cup

Directions

Preheat oven to 425 degrees.

Mix Nutmeg, Cinnamon, Cumin and Sage.

Slit pork loins lengthwise but not through.

Rub spice mix onto both loins, inside and out.

Melt butter in oven-safe pan over medium-high heat.

Sear the meat until lightly browned on each side, remove pan from heat.

Turn pork so the sliced side is facing up. Using tongs (the meat is HOT), stuff each loin with 1 cup of the frozen cherries, distributing evenly.

Replace meat in the pan and bake for 20-30 minutes, or until internal temperature measures 160 degrees.


Pull meat from plan and allow to rest on cutting board.

Sprinkle cornstarch over pan and deglaze with the 1 cup chicken broth over medium heat. The cornstarch will lightly thicken the gravy while it scoops up the flavor from the spices.

Strain the gravy and skim off the fat.

Slice the meat and serve with the pan gravy.
