Yummy, Creamy Low Fat Pasta Salad

Introduction

Tangy and creamy, chock full of veggies and amazingly low in calories. Tangy and creamy, chock full of veggies and amazingly low in calories.
Number of Servings: 10

Ingredients

    1 Box of Ronzoni Garden Delight Vegetable Rotini
    12 Grape tomatoes, quartered and seeded
    1/2 Cucumber quartered
    1/2 Large Red Bell Pepper, cut into 1/2" cubes
    1/2 Large Green Bell Pepper, cut into 1/2" cubes
    3 Celery stalks, diced
    1/2 Red or Vidalia onion, diced
    2 Garlic cloves, diced small
    1 Large or 2 small ears of corn
    1 tsp each of tarragon, basil, oregano and savory
    1 TBSP of black pepper
    8 TBSP fat free sour cream
    4 TBSP Kraft Low Fat Olive Oil Mayo
    1/8 cup Red wine vinegar
    Salt to taste

Directions

1. Prepare pasta according to directions. Simultaneously, boil 4-6 cups of water for corn. Boil corn for 6-17 minutes.
2. In a large bowl combine all veggies and spices, except garlic.
3. When pasta and corn have finished, shock both in cold water.
4. Cut corn off the cob and toss in with vegetables/ spices. Add pasta when it has finished draining and toss mixture again.
5. In a measuring cup, combine diced garlic, red wine vinegar, fat free sour cream and mayo. Whisk until blended and combine with pasta salad.
6. Chill for 1 hour before serving.

Serving Size: makes 10 - 2/3 cup servings

    I noticed that the pasta is not listed in the ingredients. Is it included in the calorie count?? - 6/3/11

    Silly me! The kids were vying for my attention when I was writing this out. Yes, the pasta is included in calorie count and I will amend the recipe now. Thanks for that!
