Slow Cooker Mole

Ingredients

    1 medium onion, chopped
    50 g raisins
    3 cloves garlic, chopped
    1 finely chopped canned chipotle chile in adobo sauce
    3 tablespoons peanut butter
    1-1/2 cups Desert Pepper Black Bean & Corn Salsa
    1 teaspoon ground cinnamon
    4 teaspoons chili powder
    1 teaspoon ground cumin
    1/2 teaspoon ground coriander
    1/8 teaspoon ground nutmeg
    3 tablespoons unsweetened cocoa powder
    24 oz 97/3 ground turkey

Directions

Place everything in a crock pot and cook on low for 6 hours.

Can also be made with boneless, skinless chicken breasts, shredded or not before serving.

Serving Size: makes 8 servings, apx 180 g per serving
