Ingredients

1 box Raisin Bran cereal (15 ounces)
4 cups low fat buttermilk
1/2 cup mashed bananas
1/2 cup applesauce
2 1/2 cups whole wheat flour
2 1/2 cups all purpose flour
3 cups sugar
5 teaspoons baking soda
4 eggs, beaten
2 teaspoons salt
Directions
Mix the cereal, sugar, flours, soda and salt. Add beaten eggs, bananas, applesauce and buttermilk. Use a LARGE mixing bowl and mix well. Store in refrigerator, covered, and use as desired in a muffin pan. You can make just two muffins or an entire dozen at a time, whatever your need is. Do not stir the batter after the initial preparation. Bake 20 minutes in a preheated 400 degree oven. Makes 3 to 4 dozen muffins. Serving size is one muffin.
