Grilled Butternut Squash

Ingredients

    3 T olive oil
    2 garlic cloves, minced
    1/4 tsp salt
    1/4 tsp pepper
    1 small butternut squash, peeled and cut lengthwise into 1/2" slices

Directions

In a small bowl, combine the oil, garlic, salt and pepper. Brush over the squash slices. Grill squash, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender.
*I put squash in the microwave for approx. 5 min after I cut in half length wise and scooped out seeds. Made it easier to slice*

Serving Size: Makes 4 - 1/2" servings
