Introduction

Ingredients

    4 tbsp + 1 tsp Soy Sauce low sodium
    2.5 tbsp Miso Paste
    3 tbsp cornstarch, mixed with 3 tbsp water
    3 tbsp Rice Vinegar, no sugar, no sodium
    5.5 oz Fresh Ginger, minced
    1 cup sliced fresh Shitake mushrooms
    13 cups veggie broth, no sodium
    5 1/3 cups brocolli florets
    1.5 cups sliced red peppers, bite size
    3/4 cup frozen peas
    8.5 cups chopped baby bok choy
    510 grams diced medium tofu
    291 grams fresh noodles, cooked
    8 tsp sesame oil

Directions

In a large pot, heat veggie broth, add miso paste, blend well (use of immersion blender very helpful). Add soy sauce, rice vinegar, corn starch, ginger, and mushrooms. Bring to boil, reduce heat, add remaining veggies and tofu and noodles. Heat for 10 minutes, or until veggies are tender. Just before ladeling into soup bowls, add the sesame oil.
