Ingredients

6 boneless skinless chicken breast tenderloins (or 2 boneless skinless chicken breasts)
2 cans (15 oz.) cannellini beans, drained and rinsed
2 carrots, halved lengthwise and chopped
1 red onion, diced
3 cloves garlic, minced
1 large can (28 oz.) diced tomatoes in juice
1 bottle (12 oz.) dark beer -- I recommend a porter
2 cups water
1 tsp coarse sea salt
1 tsp ground cumin
1 tsp ground coriander
2 chipotle peppers in adobo sauce, minced
4 oz. shredded light mexican cheese blend for garnishing
Tips
Directions
Put all ingredients (except the cheese) into a slowcooker. Stir, cover, turn on low, and let cook for 8-10 hours. Remove the chicken breast pieces, shred or dice them up, return them to the pot and mix well. Serve, garnish each bowl with 2 tbsp of shredded lite (2%) mexican cheese blend.
