2 cans Pink Salmon, drained, with skin & spine removed
3/4 cup Bread crumbs (I "process" a slice or two of bread)
3/4 cup Evaporated milk
1/2 cup Onion, finely chopped
1 Tbsp Melted Butter
1 Egg yolk, lightly beaten
1 Egg white, stiffly beaten
1/2 tsp. ground thyme
1/2 tsp. ground coriander
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
Crumble salmon into bowl. Discard skin and spinebone
In smaller bowl, combine bread crumbs and milk and add to salmon.
Add all but the egg white and mix together really well. (make sure all bones are well crushed)
Fold in beaten egg white and put mixture in prepared pan.
Place on centre rack of oven and bake for 50 – 55 minutes.
Serve with sauce of choice
