1 TBS Olive oil
1 cup chopped onion
1 chopped Green or Red Pepper ( I use 2 Jalapenos for extra flavor)
2 large chopped potatoes
1 head of broccoli
1 can corn
1 can vegetable broth
2 cups milk
1/2 cup reduced fat shredded cheddar cheese
2) Add potatoes and flour cook and additional 3 minutes
3) Add Broth, milk, broccoli and corn, bring to a boil.
4) Reduce heat and simmer for 20 minutes stirring occansionaly
5) Add cheddar cheese and stir until completely melted.
Serve with additional cheese on top if desired.
