Turkey Kofta Sandwich

Ingredients

    16 oz ground turkey 93% lean

    1/2 white onion, diced small

    1/3 cup fresh parsley leaves

    Mrs. Dash original or Garlic & Herb

    1/2 tsp cumin or red-pepper flakes (optional)

    1/2 cucumber diced

    1 garlic clove, grated

    1/2 cup plain FF Greek yogurt

    Cooking spray or squirt of EVOO

    2 medium tomatoes, sliced

    4 Kangaroo whole wheat 1/2 pockets (110 calories)

    1/2 cup fresh mint leaves, for serving





Directions

Combine ground turkey, onion and parsley in a large bowl with Mrs. Dash (add cumin and/or red pepper flakes at this point. I use cumin). Mix until well combined and form into 8 oval patties.

Using a nonstick skillet, spray with cooking spray until browned on both sides and cooked through about 12 minutes.

In a medium bowl toss together cucumber, garlic, and yogurt; season with Mrs. Dash.

Divide patties and tomatoes among pitas. Top with cucumber yogurt sauce and mint.
