Summer Corn Chowder

Introduction

A modified recipe originally taken from Weight Watchers. The original version calls for celery instead of jalepeno, and only regular milk. I have also added the olive oil. This can easily be removed. Number of Servings: 4

Ingredients

    1 potato - baked scooped out and mashed. A regular sized potato not a giant one.
    1/2 C. Onion - chopped
    1/2 C. Red Pepper - chopped
    3 jalepenos - seeded and chopped
    1 Tbsp Olive Oil
    2 C Frozen Corn
    12 oz Evaporated Skim Milk
    1/2 C. 1% Milk
    4 oz Lean ham - Diced
    1/2 tsp salt
    1/4 tsp pepper
    Dash of Hot Sauce

Directions

Saute the onions and pepper in the olive oil until cooked. Add the corn. Cook until the corn starts to heat through. Add the potato and the milks. Add the ham. Season with salt, pepper, and hot sauce. Heat through and enjoy.

Serving Size: Makes 4 - 1.5 cup Servings
