Greek Orzo Salad with Feta

Ingredients

    1 cup orzo
    1 cup red pepper, chopped
    1 cup cucumber, chopped
    24 grape tomatoes, sliced in two
    1/3 cup red onion, chopped
    12 jumbo black olives, sliced in two
    1/2 cup feta cheese, crumbled
    2 tablespoons white wine vinegar
    3 tablespoons lemon juice
    1 teaspoon lemon zest
    1 clove garlic, minced
    1 tablespoon olive oil
    1 tablespoon Dijon mustard
    1 tablespoon honey
    1 teaspoon sugar
    1/2 teaspoon dried basil leaves

Directions

Cook orzo according to package directions; drain. Combine orzo with red pepper, cucumber, tomatoes, onions, olives and feta.
In a separate bowl, whisk to combine vinegar, lemon juice, zest, garlic, olive oil, mustard, honey, sugar and basil; pour over orzo mixture and stir.
Cover and refrigerate at least two hours or overnight. Toss again just before serving.

  • We liked the idea of adding dijon mustard! We omitted the honey (unnecessary calories) and added a ton more basil and garlic. We also added oregano (what's Greek without oregano?!), artichokes, and black pepper. Thanks for sharing! - 4/21/13
