Almost Fat Free Egg Salad

Introduction

This is a delicious substitute for the mayonnaise loaded egg salad, you won't even know the difference. This is a delicious substitute for the mayonnaise loaded egg salad, you won't even know the difference.
Number of Servings: 1

Ingredients

    4 large eggs, hard boiled
    1/4 c. low fat cottage cheese
    1 tsp. mustard
    1 tsp. mayonnaise
    chives, to your liking...
    salt and pepper to taste.

Directions

Hard boil the four eggs, peel and cool. Seperate yolks from whites. Mash 1 egg yolk, (feed the rest to your dog or your neighbors dog). Chop egg whites. Whip cottage cheese with mixer, add egg whites, mustard, mayo and chives. Add salt & pepper to taste and enjoy.

If you want to cut the calories more, use a low fat or fat free version of mayo. Personally I don't like either of those... so I figured this with regular mayonnaise.

Serving Size: makes 1 serving of really good egg salad.
