Stir-Fry Tofu

Introduction

Vegetable & Tofu stir-fry. Any vegetables will work.

Ingredients

    Tofu - firm or extra firm
    Zucchini
    Snap Peas
    Broccoli
    Turnip
    Pattypan Squash
    Summer Squash
    Garlic

Directions

1) Cut tofu into 1/4" slices & brown tofu in olive oil.

2) Cut vegetables into bite size pieces. In microwave safe dish steam 5-6 minutes.

3) Make Lemon Stir Fry Sauce
1/2 c Lemon Juice
2 tsp Lemon Zest
1/2 c chicken broth
2 tbsp soy
4 tbsp sugar

Add vegetables & sauce to tofu pan, cover, simmer 10 minutes.

Suggest serving over brown rice.
