Avocado Veggie Crackers

Introduction

When my mother told me she makes this recipe for lunch every day I didn't think it sounded too delicious. But then she made it for me and... yummy... the combination of flavors is surprisingly delicious and very healthy! Eat as a snack or in larger portions for lunch. Ingredients

    6 rye crackers
    1 medium carrot, grated
    1 tbsp light mayonnaise
    1 medium avocado
    1 medium tomato
    Salt and fresh ground pepper to taste

Directions

Mix the grated carrot together with the mayonnaise.
Chop the avocado into cubes and add to mixture. (I love avocado and try not to blend it too much, so there are tasty chunks in the mixture.)
Grind the pepper into the mixture.
Spread mixture onto crackers.
Slice tomato into 6 slices for the top of each cracker.
A little salt on the tomato brings out the flavor beautifully. Voila... enjoy!
One cracker = 1 serving as a snack. But I sometimes eat larger portions of this recipe for lunch too.

    Actually, I entered all the ingredients into the Sparkrecipes recipe calculator and for 6 of these crackers with dip it's 609 cals total. Who's going to eat just one of these? So yes, ONE CRACKER is 117 cals.

    I haven't made this, but I do make my own guacamole & if you keep the avocado seed in the bowl, it keeps your avocado dish a nice green color! Just a hint! - 9/22/08

    Love avocados on sandwiches. This will be a great recipe on rye crackers. May I suggest WASA brand rye crackers...they are delicious and very low cal with high fiber. - 9/19/08
