Amy's Slow Cooked Turkey Italian Minestrone

Ingredients

    Stewed Tomatoes, crushed, 2 cans (14 oz)
    Beef broth, 1 can (10.5 oz)
    Water, tap, 8 cup (8 fl oz)
    kidney beans, dry, 1 cup
    Beans, Garbonzos, Chick Peas, dry, 1 cup
    Beans, Pinto, dry, 1 cup
    Turkey Italian Sausage, 5 links
    Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.)
    Sweet potato, 1 sweetpotato, 5" long
    Carrots, raw, 3 large (7-1/4" to 8-1/2" long)
    Celery, raw, 2 stalk, large (11"-12" long)
    Onions, raw, 1 medium (2-1/2" dia)
    Salt and Pepper to taste.
    Garlic Powder
    Oregano
    Basil

Directions

Chop the carrots, celery (include the greens), onion, and potatoes in cubes.
Add to your slow cooker.
Add all the beans to slow cooker.
Crush the stewed tomatoes and add to slow cooker.
Cut the turkey sausage into large chunks and add to slow cooker.
Add beef broth and water.
Add seasonings.
Turn slow cooker on high for 5 hours or low for 8 hours.
*Optional - add whole wheat pasta shells in last half hour of cooking.
Makes 10 2-cup servings.
