Introduction

Number of Servings: 6

Ingredients

    6 eggs
    2 scallions
    1 red bell pepper
    1 cup (or approx. 185 g) - raw, extra lean ground beef sirloin

    This recipe is very flexible - you can add many different variations of veggies and meat (mushrooms, spinach, ham, tomatoes, etc). Cheese isn't allowed on the Paleo diet but these would be great with feta, cheddar or mozarella added in as well.

Directions

Preheat oven to 350 degrees C.
Brown the meat.
Whisk together 6 eggs in a bowl.
Dice the red pepper and the scallions.
Grease 6 muffin wells. Add everything together and distribute evenly into the muffin tin.
Bake for 35 minutes.

Serving Size: Makes 6 "muffins"
