Lemon Protein Bars

Number of Servings: 8


    • 1 cup oat flour
    • 2 scoops vanilla whey protein
    • ˝ tsp baking soda
    • 2qt mix of Crystal Light Lemonade-mix only!!! (I bought the container of 4- 2qt cups and used 1 of the cups)
    • 4 egg whites (I used ˝ cup liquid egg whites)
    • 1/2 cup Splenda, Truvia, or Ideal
    • 1 cup unsweetened applesauce
    • ˝ cup water

Preheat oven to 350 degrees.
Mix oat flour, vanilla whey protein, salt, baking soda and crystal light, in large bowl.
Mix egg whites, Splenda, applesauce and water in a bowl.
Add wet ingredients to dry ingredients and mix together.
Spray 8x8 dish with non-stick spray. Pour ingredients into dish.
Bake 25-30 minutes or until toothpick in center comes out clean and top/edges are golden brown.
Cut when cool and place I fridge for “firmer” bars OR eat warm (they’re good both ways I think)
Makes 16 squares, 2 squares per serving.
