Family Favorite Pancakes

Submitted by: MAYFIELD0801

Introduction

This is a good pancake but I'm still trying to figure out how to make them a bit thicker. The first time I made them they were paper thin, this time they were a bit thicker. I think the blender made the differenct. Gonna try egg whites only next time and whip them up separately then fold the rest in, see if that helps. Other than that they are really good tasting. Ingredients

    Banana, fresh, 1 large
    Cinnamon, ground, 1 tsp
Instant, Quick, and Regular Oats Cereal, 1/2 cup
Whey Protein Powder, vanilla 1 scoop
Egg substitute, liquid (Egg Beaters), 1 cup

Directions

In a blender add all of the ingredients in order of appearance. Blend for 8-10 seconds. (I mixed it a bit longer). If the mixture is too thick, you can add a drop of non-fat or soy milk. Preheat a non-stick frying pan or spray with a non-stick cooking spray. On medium heat, pour 4x4" pancakes. Flip when you see air bubbles on the top. Cook on the second side uncovered until the bottom is golden brown. Serve and top with a sugar-free syrup.
Make a complete meal by adding a cup of berries.

Serving Size: 12-15 4x4" pancakes serves 2 people
