Blair's Minestrone

Introduction

Easy to throw together, and super low in calories and fat. Perfect to warm up with on cold days! Easy to throw together, and super low in calories and fat. Perfect to warm up with on cold days!
Number of Servings: 8

Ingredients

    Ditalini Pasta, 1 cup
    diced tomatoes, canned, 14.5 oz
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    Onions, raw, .5 cup, chopped
    Parsley, .25 cup
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Chicken Broth or Bouillon, 4 cup

Directions

In a med-large stock pot, combine all ingredients except the pasta. Over med-high heat, simmer until carrots and celery begin to soften. Add dry pasta. Cook until pasta is done. Serve as is, or sprinkle w/ a little parmesan cheese. Great w/ drop biscuits. Makes approx 8, 1-cup servings.

  • This soup was both easy and delicious. I used vegetable broth instead of chicken broth. The amount of pepper seemed like a lot, but was very good in the soup. The amount of salt can be decreased if the broth and tomatoes both contain salt. - 1/21/08
