Jamoca Tea Bread

Ingredients

    1 cup all-purpose flour
    1 cup whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    4 tsp instant coffee granules
    1/2 tsp salt
    1/2 cup egg substitute
    1/2 cup heart-healthy butter spread
    3/4 cup Splenda for baking
    1/2 cup skim milk
    1/2 cup plain non-fat yogurt
    3/4 cup dark chocolate chips
    1 tsp vanilla extract

Directions

1. Preheat oven to 325 degrees. Spray two 8.5 x 4.5 -inch loaf pans with cooking spray.

2. Combine first six ingredients in a mixing bowl. Set aside.

3. Place eggs, butter spread, Splenda, milk, yogurt, chocolate chips and vanilla extract into a high-power blender (Vitamix).

4. Blend on high for 20-30 seconds.

5.Pour wet mixture into dry ingredients and fold gently.

6. Pour batter into prepared pans.

7. Bake for 40-50 minutes or until a knife inserted into the center comes out clean. Cool in pans for 20 minutes before serving.

Serving Size: Makes 2 Loaves, 14 slices each
