This recipe is a great, healthy, cold salad and is a big hit everywhere I take it. Add a tablespoon of spicy salsa to kick up the flavor and heat into your individual serving. Ingredients

3 c. cooked quinoa
1/2 avocado diced
2 plum tomatoes diced
3 tbsp cilantro chopped
4 tbsp red or yellow onion diced
1/2 c. red peppers diced
1 can of black beans rinsed
1 can of chickpeas rinsed
Dressing:
2 tbsp lemon or lime juice
2 tbsp extra-virgin olive oil
pinch of salt and pepper
Directions
Whisk together lemon juice and olive oil, add a pinch of salt and pepper then add the avocados and let them marinate in dressing for a few minutes. They will break down a little allowing the flavor of the avocado to incorporate into the dressing. Then add the rest of the ingredients into the dressing and mix together well. Serve chilled. Add more salt and pepper to taste.
