Quinoa and Veggies

Introduction

Dr. Oz toted that this is a super food grain. It has a barely taste but is gluten free. Dr. Oz toted that this is a super food grain. It has a barely taste but is gluten free.
Number of Servings: 8

Ingredients

    1 C Quinoa (pre cooked)
    1 C Veggie Broth
    1/2 C Green Peppers (chopped)
    1/2 C red Peppers (chopped)
    1 C Yellow Corn (canned, drained and rinsed)
    1 C Asparagus (cut into 1" pieces)
    1 C Tomatoes (diced)
    1 C Mushrooms (Fresh and chopped)
    Fresh Cilantro or Fresh Basil to taste
    Garlic to taste

Directions

Pre Cook Quinoa and set aside

In large Saute pan, add all half veggie broth and all other ingredients except Quinoa.

Stir fry until veggies are soft and tender. Add second half of veggie broth and prepared Quinoa and cook over medium heat until well incorporated.

Serving Size: serving size is about 1/3rd of a cup but may be more towards 1/2cup
