Easy-Bake Egg and Potato Frittata

Ingredients

    Egg substitute, liquid (Egg Beaters), .5 cup
    *1 Cup Skim Milk (Non-Fat), .5 cup
    *Hash Brown Potatoes, Mr. Dell Shredded, 3.5 cup Cheddar , Low Fat, 1 cup, shredded
    Onions, raw, .5 cup, chopped
    Bacon, 1 medium slices, cooked about 4T
    Salt, .5 tsp
    Chili powder, .5 tsp
    *green onions (3 - 6 inch),

Directions

Whisk together the eggs and milk in a large bowl. Stir in hash browns, 3/4c of the cheese, onion, 2T bacon, and the spices. Coat an 8x8 baking dish lightly with cooking spray and add egg mixture. Bake at 350 degrees for about 45 minutes or until a knife comes out of the center clean. Sprinkle the top with the remaining cheese and bacon and the green onions. Let it stand for several minutes before cutting. Cut into 6 equal pieces.
