Salsa Chicken

Number of Servings: 4

Ingredients

    8 boneless, skinless chicken thighs
    4 garlic cloves, minced
    1 tbsp EVOO
    1 1/2 cups chunky salsa
    1 1/2 tsp cumin
    1 tsp cinnamon
    2 tbsp honey
    4 tbsp dried currants
    1/2 cup water

Directions

Heat oil. Add chicken thighs and cook for 4 or 5 minutes turning once. When chicken is turned add minced garlic.

Mix sauce ingredients together and add to chicken. Reduce heat to medium and cover. Simmer for about 20 minutes, stirring occasionally.

Serve with Cous Cous, Basmati, or Brown Rice (not included in calorie count)
