1/2 onion-diced 1 1/2 c. chicken stock 1 1/2 tsp dried basil 3 gloves garlic-minced 1 c uncooked couscous 1/4 tsp ground black pepper 1 medium ripe tomoato-diced
Spray a pan with PAM and saute onion until slightly brown and a little crispy. Add the couscous and garlic and slightly brown (i liked the nuttier flavor this is optional), slowly add broth and basil bring to a slight boil, remove from heat and add tomatoes and cover. Let stand about 5 min or until liquid as been absorbed. You can top with FF parmesan cheese( i did not add this). Makes about 8 servings.
