Zuccchini Summer Squash Ribbon Salad

Introduction

Perfect for a hot summer night, this salad features gently cooked zucchini and summer squash mixed with tomatoes and avocado and dressed with lemon juice and just a touch of garlic. Perfect for a hot summer night, this salad features gently cooked zucchini and summer squash mixed with tomatoes and avocado and dressed with lemon juice and just a touch of garlic.
Number of Servings: 4

Ingredients

    2 Large (baby) Zucchini
    1 Large Summer squash
    2 C. Cherry Tomatoes, halved
    Juice of 1 Lemon
    2 t. Olive Oil
    A pinch (a scant 0.25 t.) Garlic powder
    3 T. Cilantro, minced
    1 Avocado, peeled, seeded and cubed

Directions

Using a mandolin or a veggie peeler, slice zucchini and summer squash into long thin ribbons. Season lightly with salt. Using a skillet, heat the olive oil and cook the ribbons 1-2 minutes until just barely tender. Arrange on a platter. Layer on tomatoes and avocado. Squeeze lemon juice over all. Sprinkle everything very lightly with garlic powder and salt (optional) and add cilantro. Serve immediately.
