Greek Chicken Breasts

Introduction

Really good served with lowfat roasted potatoes and carrots. Really good served with lowfat roasted potatoes and carrots.
Number of Servings: 6

Ingredients

    4 chicken breasts (bone-in, skin removed)
    2 lemons, juice of
    4 garlic cloves, minced
    1 tsp olive oil
    2 oz white wine (or chicken broth)
    salt, pepper, oregano and onion powder - to taste
    1 Tomato, thinly sliced
    1 oz feta cheese, crumbled (optional)

Directions

1. Preheat oven to 400* and spray a roasting pan or casserole dish with cooking spray.
2. Place chicken breasts in pan and place tomato slices on top.
3. Mix the remaining liquid ingredients together and pour over chicken. Sprinkle with spices.
4. Bake covered for 30 minutes then uncover and continue cooking for about 15 minutes or until cooked through. (sprinkle with feta cheese, if using, during the last 15 minutes.
