Ingredients


    *Quick cooking oat meal, 2 cups
    *Flour, white, 1 cup
    Cinnamon, ground, 1 tsp
    Cloves, ground, 1 tsp
    Ginger, ground, 1 tsp
    Baking Soda, .5tsp
    Salt, .5 tsp
    Baking Powder, 1 tsp
    Brown sugar, .25 cup
    *Libby's Pumpkin Pie Filling, 1 cup
    Egg, fresh, 2 large
    *Musselman's Home Style Natural Unsweetened Apple Sauce, 0.5 cup
    Almond Breeze Almond Milk, Unsweetened Vanilla, 4 oz

Directions

Pre-heat oven to 350 degrees.

Take instant oatmeal and blend to a fine "flour" in blender or food processor. Empty into large bowl and whisk together with all other dry ingredients. In separate bowl combine wet ingredients. Add wet ingredients into dry; stir until just combined.

Spray mini muffin pan with non-stick cooking spray.

Measure approximately 1 table spoon batter into each mini muffin cup. Bake for 10-15 minutes. Allow to cool for 5 minutes before removing from pan to cool completely on wire rack.

Serving Size: makes 36- 40 mini muffins
