Grandma's Bran Muffins

Introduction

This was my grandma's recipe that was wonderful for breakfast! Good amount of fiber and tastes great! I tweaked it a bit in substituting half w/w flour and half white flour. Also substituting half sugar and half splenda.

**Unused Batter will keep in refrig for up to a month!

Number of Servings: 24

Ingredients

    Post Bran Flakes Cereal, 3 cups
    Boiling Water 1 cup
    *Crisco Pure Vegetable Oil, 1/2 cup
    *Whole Wheat Flour, 1.25 cup
    *Flour, white, 1.25 cup
    Buttermilk, 2 cup
    Granulated Sugar, 0.75 cup
    *Sucralose (like Splenda), 0.75 cup
    Baking Soda, 2.5 tsp
    Eggs beaten , 2 large

Directions

1. Combine 1 cup bran flakes with boiling water and oil. Set aside

2. Mix Flours, sugars, baking soda and remaining cereal

3. Add Eggs and buttermilk to flour mixture. Mix well

4. Stir into cereal/oil mixture (add raisins if desired, not included in nutritional info)

5. Put in well greased muffin tins

6. bake at 400 for 15-20 min

***Batter will keep unbaked in refrig. for a month if covered
