Lemon Oat Bread

Ingredients

    2 1/2 tsp. yeast
    1 1/2 cup oatmeal
    3 cup flour
    1 tsp. lemon juice
    2 tsp. salt
    1/4 cup oil
    1/4 cup sugar
    1 1/2 cup water

Directions

Put ingredients in bread maker in order recommended.
Use dough cycle.
Check to see if you need more flour or water.
Add one tablespoon at a time if necessary.
Take out if dough gets too high.
Let rise until it rises higher than the pan.
Spray oil 2 bread pans.
Divide dough and press each into a pan until pushing to get rid of air.
Spray tops of loaves lightly and let rise until higher than tops of pans.
Put bread in oven and turn on to 350 degrees.
Bake for 20 - 30 minutes until golden brown and bottom of pan sounds hollow when thumped.
Let rest in pans 5 minutes and turn loaves onto cutting board.
Let rest 30 minutes before cutting.

Serving Size: 2 loaves - 12 slices each
