2-1/2 pounds white potatoes, cubed
2 Slices low sodium bacon
1 medium onion, finely chopped
1/2 pound fresh mushrooms, chopped
1/2 cup sour cream
1/4 teaspoon pepper
1/4 grated Parmesan cheese
Spoon into a greased 2-qt. baking dish. Sprinkle with cheese.
Bake, uncovered, at 400° for 20-25 minutes or until heated through and golden brown. 8 servings.
