Maryland Crab Cakes

Number of Servings: 6

Ingredients

    1 lb lump crabmeat
    12 saltines
    1 egg lightly beaten
    1 T mayonnaise
    1 t mustard
    1 t worcestershire sauce
    1 T old bay season
    2 T butter

Directions

finely crush saltines into large bowl with crabmeat. Add egg, mayonnaise, mustard, worcestershire sauce and Old Bay. Mix lightly by hand to keep from overworking the crab. Divide mixture into 6 sections and make into patties. Heat 2 T butter in skillet and fry cakes for @ 5 minutes each side or until nice crust appears on each side.

You can freeze these by placing on a plate (spray with cooking oil) and put in freezer for @ 1 hour. Take out and individually wrap in parchment or plastic wrap. Put in a freezer bag and get out as much air as possible. These are great to move to refrigerator in morning and reheating for dinner.
