Chicken Rice Casserole

Introduction

Yummy, easy casserole to use up left over rice. To make it even quicker you can use 2 cans of chicken. Yummy, easy casserole to use up left over rice. To make it even quicker you can use 2 cans of chicken.
Number of Servings: 6

Ingredients

    1/4 cup butter
    1/3 cup flour
    3/4 tsp salt
    1/8 tsp pepper
    1 1/2 cups milk 1%
    1 cup no salt chicken broth
    2 cups cut up cooked chicken
    1 1/2 cups cooked white rice
    1 can diced mushrooms
    1/3 cup red or green bell pepper

    *note, for more flavour save mushroom liquid and add 1/4 cup to chicken broth, reduce broth to 3/4.

Directions

1. Heat oven to 350'.
2. Melt butter in pan over med. heat. Stir in flour, salt and pepper until bubbly, stirring constantly. Remove from heat. Stir in milk and broth. Heat to boiling, stiring constantly. boil and stir 1 minute. Stir in remaining ingredients.
3. Pour into ungreased square baking dish 8x8x2. Bake uncovered 40-45minutes or until bubbly.

note* for an extra cruch add slivered almonds to the top in the last 10minutes of baking (this is not in calorie count)
