Cabbage Casserole with Swiss Cheese and Turkey

Introduction

Altered from another recipe on this site to add some protein and real eggs! This is a mild but very flavorful dish. Dress it up by using Grueyere cheese, or add some red pepper flakes while sautéing. Ingredients

    4 cups shredded cabbage
    1 cup grated carrot
    1/2 cup chopped green onions
    10 oz lean ground turkey (1/2 pkg Jeanie-O)
    1 can white beans drained and rinced (or 2C fresh cooked)
    2 eggs
    1 cup skim milk
    6 ounces shredded/sliced Swiss cheese
    1/2 tsp seasoned salt (Old Bay if you have it)
    1/2 tsp black pepper
    2 tbsp minced fresh parsley or cilantro
    2 tbsp shredded Parmesan cheese

Directions

Using nonstick cooking spray, saute' the cabbage, carrot and onions until crisp-tender. Transfer to a greased shallow 2-qt baking dish (a glass 8" x12" works well).

Meanwhile, brown the turkey and garlic in another skillet. If you're not in a hurry, just wait for the cabbage to finish then use that skillet. Layer the cooked turkey over the cabbage in the casserole dish.

Spread the drained & rinsed beans over the turkey. Sprinkle the swiss cheese over all. (If you can only find slices, just cut them into strips and lay over)

In a bowl, combine the egg, milk, pepper and seasoned salt. Pour over everything. The egg mixture will not cover it all.

Sprinkle with the parsley and Parmesan cheese.
Bake, uncovered, at 350 degrees for 30-35 minutes or until a knife inserted near the center comes out clean.

Cut into 6 wedges.

This recipe doubles well - use a 9x13 dish and cut into 12 pieces, like lasagna. You can also partially prep this recipe ahead. Layer the cooked cabbage, meat, beans and cheese into your casserole dish, cover and refrigerate. Mix and pour the eggs just before baking. Casserole will take longer to bake, since everything was cold.
