this is not a low cal low sodium side due to the use of cooking with evoo but is it very healthyyou can make this dish with water and steam your vegies instead of fry them in a skillet you just have to stir stir stir so nothing burns and just use sae salt and no soy sause. its more sweet then salty, but its just as good. this is not a low cal low sodium side due to the use of cooking with evoo but is it very healthy

Ingredients

1 tbs evoo
2 mandrin orages
1 tbs soy sauce
1 cup brown rice cooked
1/4 cup chopped onion
1/2 cup bell pepper chopped
6 lrg baby carrots chopped
1 tbs ground garlic
1/2 cup frozen or fresh peas
1/2 cup zucchini chopped
Directions
heat skillet on med high add evoo till hot. add garlic, onion,and bell pepper. add a dash of sea salt if desierd to help sweat.stir and cook about 5 min till onion start to brown. add carrots and mandrin oranges. cook for about 5 min stiring constantly to asurre that nothing burns. add rice and stir till browning occures about 5 min. add soy sauce and zucchini and peas stir about another 3 to 5 min. sea salt and pepper if desired to taste and a sqeeze of lemon juice.
serve with fish, chicken or pork. I like to serve this with my mandrin pineapple chicken ( kind of a sweet and sour mix)
