Gazpacho - from Simply Sugar & Gluten free

Ingredients

    4 c. organic tomato juice
    5-6 tomatoes, blanched & skins removed
    1/2 medium red onion diced
    1 english cucumber, small dice
    1/4 c fresh, chopped parsley (I Prefer flat leaf or Italian Parsley)
    2 TBSP fresh, chopped basil
    2 TBSP fresh, chopped cilantro
    1-2 c water
    10-15 drops of tabasco
    sea salt and fresh black pepper to taste

Directions

put the tomato juice in a large bowl or pot. Dice the blanched tomtatoes and add them to the tomato juice along with the onion, cucumber, parsley, basil, cilantro. Stir in enough water to reach the desired consistency. Add the hot sauce, sea salt and black pepper to taste. Chill over night. Serve cold
