Tomatoed brown rice

Number of Servings: 4

Ingredients

    2 cups brown rice
    500g tight, ripe tomatoes
    5 Tspoons olive oil
    1 small red onion, cut in thin circles
    1 garlic clove, peeled off and chopped
    1 dadh of oregano/marjorem
    8 leaves fresh chopped basil
    salt, pepper

Directions

1.Boil the rice in two litres salted water, mixing it 1-2 times, for 45 minutes app.
2.Wash the tomatoes out and cut them in halves.
3.Turn them upside down and place them in some strainer and let them there for 20 minutes, so that they will drip.
3.Remove their insides with a spoon and place them (the insides) in a bowl.Add regano or marjorem, the onion, the garlic the basil, salt, pepper and 3 Tspoons olive oil and mix.
4.Once the rice is ready, strain it and transfer it in a big bowl. Spray the rest oil on the rice and mix well.
5.Add the tomato mixture and enjoy.
