Shiratake Alfredo

Introduction

Shiratake Noodles with homemade alfredo sauce. Great alone as a side, or mix in chicken, shrimp, veggies, etc... as desired for a main course. **Note - some people vehemently dislike shirataki noodles. Ingredients

    2 - 8oz packages House Foods Shirataki Noodles
    2 Tbsp butter (recipe calculated w/ Smart Balance)
    1 Tbsp all-purpose flour
    1/4 teaspoon garlic salt
    1 cups half and half
    1 clove minced garlic
    1/4 cup grated Parmesan cheese
    1/4 tsp black pepper

Directions

Thoroughly rinse and drain Shiratake noodles (rinse a few times). Set aside.

Melt the butter in a saucepan over medium heat with minced garlic.
Whisk the flour and garlic salt into the melted butter until the mixture is smooth.
Slowly mix the half and half into the sauce until completely incorporated.
Stir the Parmesan cheese into the sauce, whisking continually.
Bring the sauce to a simmer and continue to cook, stirring regularly, until the sauce has thickened, 4 to 5 minutes.
**Note - if you leave simmering too long, sauce may become too thick.

Mix in noodles and any other pre-cooked ingredients you wish to add (additional ingredients not in nutritional info)
