Raspberry Spinach Salad

Number of Servings: 4

Ingredients

    1/4 cup raspberry vinegar
    4 tablespoons extra-virgin olive oil
    1/2 teaspoon finely shredded orange peel
    1/4 teaspoon freshly ground black pepper
    10 cups torn spinach
    1 cup fresh raspberries
    1 papaya, peeled, seeded, and sliced

Directions

In jar, combine the vinegar, 4 tablespoons of the oil, the honey, orange peel, and pepper. Cover and shake well. Chill the dressing until serving time.
In a large bowl, toss together the spinach and raspberries . Shake the dressing well. Add the dressing and toss lightly to coat well.
Divide among 4 salad plates. Arrange the papaya slices on each plate.
